Cornmeal Almond Coconut Cereal (serves 2) | Almonds Blanched, Sliced | 2 Tablespoons | | Water | 1 ¼ Cups + 3 Tablespoons | | Water | ½ Cup + 2 Tablespoons + 2 Teaspoons | | Yellow Cornmeal | 1 Cup | | Flaked Coconut | ¼ Cup | | Raisins | 1 ¾ Tablespoons | | Brown Sugar | ½ Tablespoon (Packed) | | Coconut Flavored Extract | ¼ Teaspoon | | Vanilla Extract White | ¼ Teaspoon | | Salt | ¼ Teaspoon | | Ground Cinnamon | 1/8 Teaspoon | | Margarine | ¾ Tablespoon |
- Toast almonds in oven until lightly browned.
- Mix cornmeal into ½ cup water in stainless steel bowl.
- Bring 1 ¼ cup water to a simmer. Add cornmeal mixture graduallywhile stirring constantly.
- Mix in remaining ingredients and let stand 5 minutes. Adjust to desiredconsistency with skim milk or hot water. Serve immediately.
